for the edge cases i would prefer doing everything on tor, be it protonmail or any other communication service but still tor first and then whatever can route everything on it (while being e2e)

SimpleX is a "better" messenger if your threat model requires it. Otherwise Signal is perfect text/sms alternative with improved UX over SimpleX and just as good privacy. You can't link/sync multiple desktops on SimpleX, you can on Signal. With Signal, your phone can die and you can continue to send messages from your laptop, SimpleX needs your phone online to work - and you can't use the phone app and desktop app at the same time.
that is the seeming which I detect as well. I'm willing to give it a shot, recognizing that any similar tool is going to have shady people on it. Thankfully it's designed so that you only connect with people intentionally.

Someone I met recently is a big simplex advocate, and seems to have done quite a lot of homework.
But Signal still very good ofc.
I think I'm happy to rule out PGP-email.
