Dinner this evening was a meal of leftovers and scraps. It was so good that I’m going to have to engineer the leftovers and scraps so that we can have it again. ‘Bubble and squeak’ (mashed potatoes and cabbage), to which I’d added crumbled crispy smoked bacon and cheddar cheese, scrambled eggs and a couple more rashers of bacon on the side, and the last few squirts of okonomyaki sauce. Nom.

I usually add an egg to bind it together, some rosemary and sage, make it into patties and cover it in panko, then serve it either with a poached egg on top or roast tomatoes and shallots.
Also nom.
