We had green lentil and mushroom shepherd's pie last week (recipe in Heart Matters magazine). It was really nice. Next one to try is Vegetable Moussaka (minus the cheese). It's helpful that heart healthy vegan food is going mainstream, hope you enjoy your pie as much as we did.
I love lentils, so I'm pretty sure I will. I haven't conquered my cheese addiction yet (tbh I've not tried and probably don't intend to 😂 ). I'd much rather eat stuff like this than the pre-packaged, mass-produced veggie/vegan stuff, although I've got some in the freezer for emergencies. Veggie moussaka is yummy! Use plenty of aubergine though, and make sure you soak it first 👍 Spanakopita's a good one too, although more of a summer dish.
Thank you for the information. My husband is vegetarian, so I put cheese in his portion and leave it out of mine. My favourite for winter is a mixed veg stew (mostly root veg) with a couple of teasps marmite and lentils. I make little herb scones to go with it. It's a real winter warmer. I was 10 when I became vegetarian (62 years ago), then switched to vegan in the early days of this century. Once you have found some basic recipes you like it's ok.
